Summer Bounty

I'm tired of all this healthy summer food.

All these fresh veggies are making me grumpy.

I am starting to crave pot roast and potatoes and pie and chili and roasted chickens.

I wouldn't want to get too healthy.


Healthy Squash

That's why I asked W4D to bring home a couple of cheesy, greasy, pepperoni pizzas for supper tonight.


Okay, I will eat a salad but absolutely nothing else healthy for at least the next 24 hours.

Summer, be damned.

heh--my dinner last night? roasted chicken and mac & cheese. i am right there with you, lady. it's cool and rainy and grey here this morning--i clearly should have stayed in bed.

Heck, I will be happy when I can drink a cup of hot coffee again or take a walk without dripping!

Yum! I want mac and cheese -- good old home-made rich and creamy, zillion calorie, 2 zillion carb, macaroni and cheese. We do roast chickens on the grill all year long but I miss roasting a big Perdue chicken in the oven with lots of veggies and rosemary and garlic. Smells so good and makes the house toasty.

My winter thing is beef stew that takes several hours to make ... I marinate the beef first and brown it, and then start it simmering in V-8 juice with the potatoes and carrots, and add the other vegetables as the morning goes. Tomatos and frozen peas and corn go last. You can put it in the fridge and heat individual servings in the microwave, and it just gets better every day.

You need cornbread with that, of course.

But summer vegetables, oh yes. Yellow crookneck squash and zucchini, briefly microwaved with maybe a little onion, and black pepper. I could eat that till it comes out my ears.

Laura, I like your the beef stew recipe with the V8. Bet that's very tasty. Will try it!

We like zukes and/or yellow squash sauteed in olive oil with some sliced onions and ground red pepper for zip. If we have extra tomatoes, we toss them in the skillet with the squash and onions. Never truly get tired of it even if we do end up eating it every other day for a month in late summer.
